Gourmandise has been a downtown Salt Lake City institution for years — and its Salt Lake City International Airport outpost brings that same character to travelers passing through the North Concourse. At just 2,300 square feet, the space had to work harder than almost any other restaurant in the portfolio. Working closely with the Gourmandise owners, OHM, and kitchen consultants, Babcock packed a full sit-down restaurant, grab-and-go cases, a coffee bar serving locally roasted La Barba coffee, a full bar with beer on tap, a pastry oven, and bakery cases into a footprint that never feels crowded. The design translates the brand's aesthetic into a bright, modern American diner with a French bakery twist — navy tile, warm wood, globe pendants, and a neon script logo that stops travelers in their tracks. It's the first restaurant you see entering the North Concourse, and it earns that position.
